Menu Plan Monday

Here's another week of Menu Plan Monday from my home!! I'm kinda being lazy this week, but oh well! We all have those weeks!! Doing some shopping from my own freezer for a few meals this week and doing so cut down on my grocery bill a bit! WA-HOOO!!

Monday: Country Salisbury Steak

Tuesday:
Hot Dogs, Veggies & Mac Salad

Wednesday: Tuna Melts, Veggies & Mac Salad

Thursday: Crockpot Saucy Meatballs with Spaghetti

Friday:
Sirloin Roast with Potatoes, Carrots & Celery

Saturday: Cuban Sandwiches

Sunday: Lo Mein Veggies

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!! Check out more Menu Plan Monday entries at orgjunkie!!

Recipes:

Country Salisbury Steak (from Kraft)
1.5 lbs ground beef
1 pk chicken stuffing mix
1.5 c. water divided
3/4 c. chopped onions
1 pk. fresh mushrooms, sliced
1/2 c. bbq sauce

Preheat to 375, mix meat, stuffing, onions and 1 1/4 c. water until blended. Shape into oval patties and place into pan. Bake 25 minutes or until cooked through. In a nonstick skillet, cook mushrooms over medium heat 5 minutes or until lightly browned, then add in bbq sauce and remaining water, simmer on low until heated through. Serve over patties.

Crockpot Saucy Meatballs
1 package turkey stuffing mix
1 lb. ground beef
1 egg, lightly beaten
1/2 cup water
2 cups sliced mushrooms
2 sliced green bell peppers
4 cups spaghetti sauce
1 lb. spaghetti
1/3 cup parm cheese

Combine stuffing mix, meat, egg and water. Form into balls and put on the bottom of the crockpot. Top with mushrooms, peppers and spaghetti sauce. Cook on low for 6 to 8 hours. Make spaghetti normally and serve the meatballs over top and sprinkle with cheese!

Sirloin Roast
Large can cream of mushroom soup
1/3 can water
1 pk. onion soup mix
2 handfuls of baby carrots
6 celery stalks cut into chunks
3 potatoes, cut into chunks
1 large onion cut into chunks
Sirloin roast (I generally use a 2-3 lb. roast, depending on what the hub brings home)

I mix everthing together in the crock pot and cook on low for 6-8 hours. I pull the roast out and slice it up, pour the gravy over and put all the veggies right on top or a just to the side!

Cuban Sandwiches (from Meal Planning 101)
These are some of my very favorite sandwiches from when I lived in Key West, so I'm going to try this recipe out and see how it adds up!! I'm sure they'll be wonderful!!

Veggie Lo Mein:
Vegetable oil
1 lb. pk. Stir fry veggies
8 oz. spaghetti (cook normally)
Minced garlic
1 sliced onion
3 tbsp. soy sauce
1 tbsp. sesame oil (I dont use this)

Toss the cooked spaghetti with 1 tbsp of veg. oil until it is evenly coated. Next heat 2 or 3 tablespoons of oil in a large skillet or a wok. Add the onion and garlic. Sautè until the onion is tender. Add the frozen stir-fry vegetables. Cook over high heat until thawed. Add the cooked spaghetti. Stir everything all up and let it fry (about 5 minutes.) Try and let the past brown a little. Top off and toss with the sesame oil and soy sauce.

Your recipes all look delicious. Hope the cuban sandwiches are as good as the ones you remember.
