Menu Plan Monday

Crazyness ensued last week, once again, I've got a carryover recipe of course. Wednesday we wound up going to the Maritime Aquarium in Norwalk, CT instead of the Bronx Zoo, which was so nice!! Kids were on their best behavior, but in my rush to leave the house, I forgot to put dinner in the crock pot!!
Here are this week's dinners, recipes are below!!

Monday:
Slow Cooker Stuffed Peppers (carry-over)

Tuesday: Hot Dogs, Pasta Salad, Veggies

Wednesday: Beefaroni

Thursday: Red Beans & Rice w/Chicken Sausage

Friday: Crock Pot Mac & Cheese

Saturday:
Strombolis

Sunday: Crock Pot Rotisserie Chicken

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!! Check out more Menu Plan Monday entries at orgjunkie!!

Recipes:

Slow Cooker Stuffed Peppers:
4 green bell peppers
1 lb. ground beef
1.5 c. cooked rice
1 jar pasta sauce
1 tsp. onion powder
1 tsp. Italian seasoning
1 tsp. salt
.5 tsp. pepper

Cut tops and hollow out peppers. In a medium mixing bowl, add the ground beef, rice, .5 cup of the pasta sauce, cheese and seasonings, mixing well with your hands to thoroughly blend. Stuff peppers with equal portions of the beef mixture. Place in the bottom of the slow cooker and top with the remainder of the sauce. Cook on low for 8 hours.

Beefaroni:
1 lb. ground beef
2 c. shredded cheddar
1 jar tomato sauce
2 tbsp. butter
1 lb. elbow mac
Salt & pepper to taste

Brown ground beef. Preheat oven to 350 degrees. Cook pasta & drain, stir in butter. Mix ground beef, pasta, tomato sauce and cheddar in a casserole dish and sprinkle salt & pepper. Bake for 30 minutes.

Red Beans & Rice w/ Chicken Sausage:
2 tbsp. A1
2 tbsp. Heinz 57
2 tbsp. Worsterchire sauce
2 onions
2-3 cans red kidney beans
1 package smoked sausage (I use chicken smoked sausage w/ cheese & garlic!)

Put all sauces in the bottom of the crockpot. Chop onions and put on top of the sauce, then beans on top of that and then chicken sausage. Cook on low for 4-6 hours. Stir will and serve over rice.

Crock Pot Mac & Cheese
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
2 tbsp. minced onion
1/2 tsp. paprika
3 c. milk
1 c. shredded cheddar cheese
2 c. uncooked elbow mac

Spray crock pot with non-stick spray. Combine flour, salt, pepper, onion, paprika and milk in a saucepan. Whisk until there are no lumps, keep heating until starts to thicken and boil. Add cheese and mac. Stir til well mixed and pour into the crock pot. Cook on low 2-3 hours.

Strombolis:
I roll up pillsbury thin pizza crust with our favorite toppings and then bake & slice. I pair this with a dish of warm sauce for dipping and a side salad!!

Crock Pot Rotisserie Chicken:
Rinse chicken and sprinkle with your favorite seasoning. I use season salt. Place fryer chicken on top of 4-5 foil balls in the crock pot. Cook on high for 6 hours.
