Menu Plan Monday

You know, each week I get my menu plan ready and get it put by the computer so that I can type this up to link at OrgJunkie's MPM on Sunday night... and for some reason I just can't seem to get that accomplished! WTF!!?!?

Monday: Crockpot Pizza

Tuesday: Sun Dried Tomato, Onion & Balsamic Chicken

Wednesday: Crockpot Cornbread Taco Casserole

Thursday: BLT Chicken Salad

Friday: Bacon Veggie Skillet

Saturday: Crockpot Smoked Brisket

Sunday: Turkey Club Pie


Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!! Check out more Menu Plan Monday entries at orgjunkie!!


Recipes:

Crockpot Pizza
crust:
1.5 c. biscuit mix (like bisquick)
1.5 c. water

16 oz. jar pizza sauce
1.5 c. mozzarella cheese
pizza toppings of your choice

Spray the inside of the crock pot with non-stick spray. Put about 1/4 of the sauce on the bottom of the crock pot. Mix the crust together and spread it out over the sauce, almost touching the sides. Top with the rest of the sauce, cheese and whichever toppings you choose. Cook on high for about 2 hours.

Sun-Dried tomato, onion and balsamic chicken (crock pot)
1 onion, coarse chopped
1 c. dried tomatoes
1/3 c. balsamic vinegar
1 lb. chicken breast
1/3 c. melted butter
1 tbsp italian seasoning
another 1/3 c. balsamic vinegar

Put the chopped onion on the bottom of the crock pot, top with sun dried tomatoes, pour 1 of the 1/3 c. balsamic on top. Combine melted butter with italian seasoning, coat chicken with that mixture and put on top of the onion/tomato/balsamic in the crock pot. Pour remaining 1/3 c. balsamic on top and cook on low 6-8 hours or high for 3 hours.

Crockpot Cornbread Taco Casserole: (from the savings ninja)
1 lb. ground beef
1 pk. taco seasoning (and specified amt. of water)
2 c. diced tomatoes
1 diced green bell pepper
Cornbread muffin mix (6 muffin package, along with ingredients specified to make)
1/2 c. cheddar cheese

Prepare ground beef with taco seasoning as stated on package. Mix together in a greased crockpot ground beef, diced tomatoes, diced bell pepper. Prepare corn muffin mix and spoon over top. Cook on low for 6 hours. Top with cheese and serve.

BLT Chicken Salads: (from Stretch Mark Mama)
1/2 cup mayonnaise
4 tablespoons barbecue sauce
2 tablespoons finely chopped onion
1 tablespoon lemon juice
1/4 teaspoon pepper

8 cups torn salad greens
2 large tomatoes, chopped
1 1/2 pounds boneless skinless chicken breasts, cooked and cubed
10 whole bacon strips, cooked and crumbed (or bacon bits, on those lazy days)
2 whole hard-boiled eggs, sliced

In a small bowl, combine the first five ingredients; mix well. Cover and refrigerate until serving. Place salad greens on a large serving platter. Sprinkle with tomatoes, chicken and bacon; garnish with eggs; Drizzle with dressing. 4 main-dish servings.

Bacon and Veggie Skillet: (from Kraft)
4 slices cooked chopped bacon
1 med. onion
1 can chicken broth
2 c. elbow macaroni
4 c. mixed veggies
4 oz. cream cheese
2 tbsp. parm cheese

Cook bacon, then cook the onion in the bacon grease. Add 1 c. water, chicken broth and macaroni to skillet. Bring to a boil and then simmer for 10 minutes. Add in veggies and cream cheese. Cook til melted and heated through. Top with bacon and parm cheese.

Turkey Club Pie:
1.5 c. cut up cooked turkey
8 slices crispy, crumbled, cooked bacon
1 c. cheddar cheese
1/2 c. bisquick
1 c. milk
2 eggs

Preheat oven to 400. Combine turkey, bacon and cheese in a pie plate. Combine bisquick, milk and eggs, pour on top of other ingredients already in pie plate. Bake 30-35 minutes, I like to top mine with sliced tomato and sliced red onion for the last 15 minutes of the bake time.
