Summer Camp with KinderCare


Recently it came to my attention that it is MARCH... When did that happen?!?! It seemed like yesterday I was bringing Boug to her first day of kindergarten back in September. Now the time is coming for me (and many other parents) to start thinking about summer activities, and most importantly, summer camp. KinderCare Learning Centers have such a valuable variety of activities for the kiddos in the summer, for them to continue growing and learning even while school isn't in session.

When I was a kid, I only went to camp two different summers. Once was a Girl Scouts sleep away camp, and once was a YWCA day camp. I can't begin to go through all the memories that I have of going to camp and I do hope that my kids get everything out of their trips to camp as they grow.

Holy Comfort JAMBU!!!


A few weeks back, I was sent these fabulous shoes for review... I stared at them, contemplated the very cutest way to wear them. I drooled a bit over them... then I put them on... My little tootsies melted into these shoes that Jambu sent me. For years, I've always thought that shoes would never fit me right. Menu Plan Monday

Another week gone by, and I swear, this new week is the one where I get my act together!! I bought a Gazelle almost two weeks ago, swearing that I'm going to use it religiously and get into shape. I haven't got on it once yet... this is the week.

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!! Check out more Menu Plan Monday entries at orgjunkie!!

Recipes::

Spaghetti Pizza
2 eggs
1 cup milk
1 package (16 ounces) cooked spaghetti
1 pound ground beef, cooked and drained
1 jar (28 ounces) spaghetti sauce
1 package (3-1/2 ounces) sliced pepperoni
1 can (4 ounces) mushroom stems and pieces, drained
1/4 cup chopped onion
Garlic salt to taste
2 cups (8 ounces) shredded part-skim mozzarella cheese
1 cup (4 ounces) shredded cheddar cheese

In a large bowl, whisk the eggs and milk. Add spaghetti; toss to coat. Transfer to a greased 13-in. x 9-in. baking dish. Top with the beef, spaghetti sauce, pepperoni, mushrooms and onion. Sprinkle with garlic salt. Bake, uncovered, at 350° for 20 minutes. Sprinkle with cheeses. Bake 10 minutes longer or until cheese is melted. Let stand 15 minutes before cutting.

Crock Pot Mac & Cheese
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
2 tbsp. minced onion
1/2 tsp. paprika
3 c. milk
1 c. shredded cheddar cheese
2 c. uncooked elbow mac

Spray crock pot with non-stick spray. Combine flour, salt, pepper, onion, paprika and milk in a saucepan. Whisk until there are no lumps, keep heating until starts to thicken and boil. Add cheese and mac. Stir til well mixed and pour into the crock pot. Cook on low 2-3 hours.

Sweet & Spicy Bacon Chicken (from Full Bellies)
4 chicken breasts cut in thirds (12 pieces)
Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar

Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine. Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.

Planning a Kissimmee vacation!

For years and years, since I was pregnant with Boug, we've been planning a vacation and something always goes wrong and we never end up going. Certain criteria has changed over the years, but in all honesty, the location is the only thing that stays the same. Kissimmee, Florida.

I haven't been down to Florida in about 7 years, and I haven't been to the Kissimmee area since I was 6 years old myself. Dear, dear friends of the family took me on their summer vacation and we wound up at Walt Disney World. I have to admit, it was one of the best times of my life. I can't wait to experience it with my own two kids. Of course, with Universal Studios right nearby as well, and Sea World Orlando, there's so much to do. But in my eyes, nothing compares to the House of Mouse.
For me, I've always wanted to go on one of those big fan boat things through the everglades. I think it would be amazing to see all the animals that live there and all the wildlife and plants that you truly cannot see anywhere else. I also cannot forget that Forever Florida's Zipline Safari is definitely topping my list of things to do on my future Kissimmee vacation!!

Of course the hotels in the area are stunning, and there are so many options to choose from. My fave? The Radisson Celebration Orlando Resort, with three pools and restaurants, what more could I want?

My motivation was here...

but where oh, where did it go?

We went from GORGEOUS 65-70 degree weather the past week or so, up until the last two days. Its been so cold and windy, I thought that we got out of the "winter zone." I'm guessing that I was wrong on that one. Mother nature tricked me!!

The warm weather brought me some motivation, a desire to be functional, but with the wind and the cold back, all I want to do now is curl up under a blanket with my monsters and watch a movie. Maybe sneak a nap in?... Yes... that sounds about right....

Great childrens hair care from Zippity Doo's!

When I was working as a hairdresser, one of my biggest fears was head lice. I was petrified of those little suckers!! Crockpot Chicken Broccoli Divan from Eat At Home

Biscuits and Gravy:
Courtesy of Household 6 Diva, her awesome step-by-step is droolworthy!

Tator Tot Casserole:
2 lb. beef
1 can cream of mushroom soup
1 bag of tator tots
1 cup of shredded cheddar cheese

Pat ground beef into bottom of greased 13x9x2-inch pan. Spread soup over meat and cover with grated cheese. Top with tater tots. Bake at 350 degrees, covered for 45 minutes and then uncovered for 15 minutes.

Beef Stroganoff Stew
.5 cup chopped onion
1 lb stew beef
2 cans cream of mushroom soup
.5 cup water
2.5 cups egg noodles
1 cup sour cream
1 clove garlic, fine chop

Layer all except noodles into crockpot, topping with soup and water. Cook on low 5-7 hours. Add uncooked noodles and increase heat to high for approximately half hour or until noodles are tender. Stir in sour cream.

Penne with Cauliflaur:
8 ounces penne pasta, uncooked
2 tablespoons butter or margarine
2 tablespoons extra-virgin olive oil
1 cup frozen chopped onion
1 tablespoon bottled minced garlic
¼ teaspoon crushed red pepper
1 (16-ounce) package frozen cauliflower
¼ cup Parmesan cheese
1 tablespoon dried parsley
3 tablespoons bottled lemon juice
1 teaspoon salt
¼ teaspoon pepper


Cook the penne normally, but save 1 cup of the pasta water. Melt butter or margerine in a skillet, add olive oil, onion and garlic. Cook about 7 minutes or so, add in the cauliflaur and red pepper. Cover and cook about 5 minutes. Add in about 3/4 of the pasta water and cook about 5 minutes. Add in the penne, parmesean, parsley, lemon juice, salt and pepper, and stir well. Cook til the cheese has melted and everything is heated through.

Dr Perricone Skin Clear

I love my new and improved beauty regimen. I used to be so nervous about using things on my sensitive skin, and I was never sure what worked with what. Now that I've switched to Perricone products, I've been so happy.

The newest addition to my routine is the Perricone MD Skin Clear Toner, which I use with the Skin Clear Cleanser that I raved about just a few short weeks ago. My picky, breakout prone, combination dry/oily, skin has been getting nicer and nicer the longer I've been using the combination of the two products. My problems with toner in the past have been that they are all so drying, and with some dry patches on my skin, I can't dry them out any more... unless I want to be miserable. Dr Perricone Skin Clear Toner has been a godsend!! I haven't been breaking out, and my skin has been far less oily, even after a day of work!!

I love that the Skin Clear Toner is anti-microbial and anti-bacterial, it keeps the yuck out of my pores!! Its also loaded with Alpha-Lipoic Acid, which is great for minimizing fine lines and reducing pore size. Of course with the added Euycalyptus Leaf Oil, the hydration that skin needs is there, and it cools inflamed skin (think big bad pimple getting a bit relaxed!!)

The Princess & The Frog on DVD TODAY!!

I haven't been this excited about a kids movie in so long, and especially since we weren't able to get into the theaters to see this one... Now that its out on DVD TODAY, I'm so excited to add The Princess and the Frog to our collection. There's just something about a Disney Princess that is simply perfection!!

Taking place in 1920's New Orleans, The Princess and the Frog follows Tiana, and her dream to open up a restaurant where everyone from all walks of life can come. Truly, she's no princess, but when she wishes too hard on a star, and voodoo ensues, Prince Naveen is brought into her life and so much more. I truly don't want to ruin the story for anyone who hasn't seen it, but there's just so much to The Princess and the Frog!! From beautiful animation, forgetting that you're watching a cartoon and becoming immersed in the story, the jazz and zydeco music that comes from the alligator... there's just so much!!

I think that I was a little nervous with Disney coming out with another princess movie, because how can one compete with the original princesses like Cinderella and Sleeping Beauty among others? Disney left it looking like an easy task, and Princess Tiana is definitely one of the greatest Disney characters in a long time, in my eyes!! Not only that, she also holds a special title, she is Disney's very first African American princess!!

Disney has always been magical, and always been known for the magic that they seem to create on the big screen. I'm so loving The Princess and the Frog, and so is Boug!!

Recipes::

Crockpot Chicken Broccoli Divan from Eat At Home

Mistake Chicken
1 lb. chicken breast
1 can cream of chicken soup
1 can of French style green beans
1/2 of a 7 oz. can of French fried onions

Put the chicken into a casserole dish and top with soup, bake at 350 for 30 minutes. Add green beans and bake for an additional 15 minutes. Top with French fried onions and bake for an additional 5 minutes, careful not to burn the onions.

Crockpot Ravioli
1 bag ravioli
1 jar pasta sauce
1 c. water
Italian seasoning
Shredded mozzarella cheese

Layer pasta sauce, ravioli, pasta sauce, Italian seasoning, water in crockpot. Top off with shredded mozzarella cheese and cook on low for 4-5 hours.

Ham, Apples & Sweet Potatoes:
1 lb. center slice ham
3 peeled and sliced about 1/4 inch thick sweet potatoes
2 tbsp. light brown sugar
4 apples, cut into wedges
3/4 c. hot water

Brown ham and place into baking dish, spread apples and sweet potatoes on top and sprinkle with brown sugar. Cover and bake at 350 degrees for about one hour.

Crockpot Veggie Lasagne
12 lasagna noodles, uncooked
1 zuchhini sliced
4 carrots grated
2 cups baby spinach
1 onion sliced
1 teaspoon Italian seasoning
1 jar(28 ounces) spaghetti sauce
1/4 cup water
16 ounces cottage cheese
2 cups mozzarella cheese, grated

Break noodles in half. Place half of the noodles in bottom of greased 4-quart slow cooker. Stir Italian seasoning into veggies and spread half over the noodles already in slow cooker. Then layer half of the sauce and water, half of the cottage cheese, and half of mozzarella cheese over beef. Repeat layers. Cover and cook on low heat for 4-5 hours. Do not cook more than 5 hours.Makes 6-8 servings.

Check in here for The View!!

Again, I'm soooo loving being one of The View Moms!! I love sharing with you whats been going on on The View, along with my personal opinions on it and letting you know what's going to be coming up on the shows too!!

This past week, there were some really awesome shows on, and once again, I'm so happy that they have the shows available on the website. My days have been so wonky that getting time for myself when the shows are live, is damn near impossible sometimes. I love kicking back and relaxing at the end of the day, in silence, when everyone is asleep and catching up on The View!!

This week there are some fabulous shows lined up, yesterday was hot topics, and Jessica Simpson was there. I haven't had a chance to check out yesterdays show yet, but I'm sure that Jessica Simpson was there to talk up her new show, where she goes all over the world to see what other cultures see beauty as.

Today's show had Marissa Tomei, discussing her new movie "Into the heart of Italy." Its so nice to see Marissa Tomei doing something mainstream again! I'm such a sucker for her movies, like "Untamed Heart."

Wednesday (3/17) show is going to be a touchy one for me, and its a topic that has been in the news alot... Dr. Drew Pinsky and some of the people from Celebrity Rehab/Sober House will be sitting in, talking about addiction. Now, I don't love that addiction is a problem in America, but I do love that these people will be on the show, talking about it... bringing it more into light. Kate Gosselin is going to be co-hosting again, although I truly wish that there would have been someone other than her as a co-host for this episode especially.

Thursday's (3/18) show is going to be the "Month in ReView" show, and the ladies are going to be touching on spring fashions as well. I'm soooo looking forward to this!! I can't wait to see what the great looks for spring are pegged to be!

Friday's (3/19) show is going to be "Fashion Friday." Not only will they be talking with designer Jason Wu, olympic gold medalist and Dancing with the Stars contestant, Evan Lysacek will be a guest. Also, Kristi Yamaguchi will be making an appearance too!

So far, as long as I've been a The View Mom, there are two shows that jump out as instant favorites. Of course, the episode with Robert Pattinson... and tomorrows show about addiction. Maybe I'm addicted to Robert Pattinson??

Martha Speaks: Martha Says It With Flowers

Whenever I have a PBS Kids dvd title on hand, I feel good, I feel like I'm doing something a little better than just letting the kids sit in front of the tv. If they like to spend their tv time watching something that's more informative, I'm definitely all for it!

Martha Speaks: Martha Says It With Flowers just came out on dvd and its great for kids to expand their vocabulary, with help from Martha- the talking dog!!

Martha Speaks: Martha Says It With Flowers is loaded with 8 different stories that my kids just love!! It contains episodes Raiders of the Lost Art, Martha Gets Spooked, Martha Changes Her Luck, There Goes the Neighborhood, Ice Scream, Martha Sings, TD Makes the Band, and of course, Martha Says It With Flowers.

Boug's favorite episode on the dvd is Martha Sings, the episode where Martha wakes up and begins to sing and simply cannot seem to stop!!

Hannah Montana: Miley Says Goodbye

As of today, Hannah Montana: Miley Says Goodbye, is available for purchase! My daughter has been looking forward to this video for so long and she's so happy that she has her own copy now. The story behind Miley Says Goodbye is simple, Miley doesn't know whether to give up her career and head back to her roots in Tennessee to be with Blue Jeans (her horse), or does she stay in Malibu to keep rocking out as Hannah Montana??

The disc includes 6 episodes, all great, including one with David Archuleta guest starring, and one where Jake returns in the episode "He could be the one." The DVD even has bonus features like an alternate ending! We love alternate endings cause its like you're getting a whole different show as a perk! Other bonus features are Hannah's Highlights: You never give me my money, and Sister Secrets with Miley's real life sister!

Of course we're always waiting for the next great Hannah Montana product to come around, but I'm thinking that Boug will be pleased for quite some time having Miley Says Goodbye in her DVD collection!
