Menu Plan Monday

Once again, a few things got bumped around on this weeks menu plan... I forgot to pick up ketchup (I definitely thought we had more on hand), and I moved the Cheeseburger Joes to tomorrow night!!
Monday: Cheeseburger Joes

Tuesday: Cantonese Pork

Wednesday: Sun Dried Tomato, Onion & Balsamic Chicken

Thursday: Crockpot Pizza

Friday: Turkey Burgers

Saturday: BBQ at a family friends house!! (night off for me!)

Sunday: Chicken Caesar Salads

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!!

Recipes:
Cheeseburger Joes (from Kraft)

1 lb. lean ground beef
1/2 cup Barbecue Sauce
1/4 cup ketchup
hamburger buns
4 KRAFT Singles (although I use sliced cheddar)

Brown meat in a skillet and drain, mix in BBQ sauce and ketchup, cook for 5 minutes stirring occasionally, spoon onto burger buns and top with cheese.

Cantonese Pork (crock pot)
2 lbs pork tenderloin
1 tbsp veg. oil
8 oz can pineapple chunks in juice (dont drain!)
8 oz can tomato sauce
2- 4 oz cans sliced mushrooms
1 thin sliced onion
3 tbsp brown sugar
2 tbsp worsterschire sauce
1.5 tsp salt
1.5 tsp white vinegar

Cut pork into 1-1.5" thick slices and brown pork on all sides and drain off fat.
Put pork, pineapple, tomato sauce, mushrooms, onion, brown sugar, worcestershire and vinegar in crock pot and cook on low for 6-8 hours. Serve over rice!

Sun-Dried tomato, onion and balsamic chicken (crock pot)
1 onion, coarse chopped
1 c. dried tomatoes
1/3 c. balsamic vinegar
1 lb. chicken breast
1/3 c. melted butter
1 tbsp italian seasoning
another 1/3 c. balsamic vinegar

Put the chopped onion on the bottom of the crock pot, top with sun dried tomatoes, pour 1 of the 1/3 c. balsamic on top. Combine melted butter with italian seasoning, coat chicken with that mixture and put on top of the onion/tomato/balsamic in the crock pot. Pour remaining 1/3 c. balsamic on top and cook on low 6-8 hours or high for 3 hours.

Crockpot Pizza
(crock pot!)
crust:
1.5 c. biscuit mix (like bisquick)
1.5 c. water

16 oz. jar pizza sauce
1.5 c. mozzarella cheese
pizza toppings of your choice

Spray the inside of the crock pot with non-stick spray. Put about 1/4 of the sauce on the bottom of the crock pot. Mix the crust together and spread it out over the sauce, almost touching the sides. Top with the rest of the sauce, cheese and whichever toppings you choose. Cook on high for about 2 hours.
