Menu Plan Monday
With a crazy end to last week screwing up my dinners for the weekend... I'm hoping for a much better week this week. We lost power Friday night while I was cooking my eggplant parm... which we were supposed to have leftovers for to have eggplant parm subs on Sunday night. Thank goodness for Mother's day cause we gathered up my parents and grandparents and went out to dinner instead!
On to this week's menu!!
Monday: Grilled Cheese and Soup
Tuesday: Philly Cheese Steak subs
Wednesday: Burgers on the grill w/ corn on the cob
Thursday: Tex-Mex Chicken
Friday: Porcupines with a side of veggies
Saturday: Bruschetta Chicken
Sunday: Crockpot Saucy Meatballs w/Spaghetti
Pretty sure that something will get bumped off this week, though I'm not sure what, my kid sister will be in town and we'll have to head over to her Mothers house at some point. She's got a role in this weeks "The Mentalist"!!! Not to mention the finales of not one, but TWO, of my favorite shows!! The Biggest Loser and Hell's Kitchen!!
Recipes:
Tex Mex Chicken:
1 lb. chicken breast, cut into strips
1/3 taco seasoning packet
2 tbsp flour
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
1 jar salsa
1 cup shredded Mexican cheese blend
Toss everything except cheese into the crock pot and cook for 6-8 hours. Top with cheese and serve! I like to do a side of rice, or even right on top!
Porcupines:
1 lb. ground beef
1/4 cup chopped onion
Salt and Pepper to taste
1/4 cup rice
1 can tomato soup
1 can water (soup can)
Mix meat, onion, salt, pepper and rice, and form into balls. Put evenly into a baking dish, and top with combined soup and water. Bake for 1 hour at 350.

Bruschetta Chicken:
1 can diced tomatoes
1 package chicken stuffing mix
1/2 cup water
2 cloves minced garlic
Dried italian seasoning to taste or dried basil
1 cup mozzarella cheese
Mix tomatoes, stuffing, water and garlic. Layer chicken, basil and cheese in a baking dish. Top with the stuffing mixture and bake 30 minutes or until chicken is cooked through.
Crockpot Saucy Meatballs:
1 package turkey stuffing mix
1 lb. ground beef
1 egg, lightly beaten
1/2 cup water
2 cups sliced mushrooms
2 sliced green bell peppers
4 cups spaghetti sauce
1 lb. spaghetti
1/3 cup parm cheese
Combine stuffing mix, meat, egg and water. Form into balls and put on the bottom of the crockpot. Top with mushrooms, peppers and spaghetti sauce. Cook on low for 6 to 8 hours. Make spaghetti normally and serve the meatballs over top and sprinkle with cheese!

Can I come to your house tonight! I love philly cheese steaks! Sounds better than the spaghetti we have planned :)
Seriously, I'll just camp out back if that's okay...Just ring a bell when dinner is served.
