Mix It Up Baby!!

My family is so tired of my cooking. They have been for a while now. I tend to get into a rut after a while and I do make some pretty kick-ass meals, I end up cycling them around again and again. I'm confident in what I already know how to do in the kitchen, but new techniques and stuff like that sometimes intimidate me.

When I heard about Betty Crocker's, The Mixer, I was so excited that they were offering a free, online cooking class!! Its not just one!! There are 6 weeks of classes!! Not only can you sit in with the classes, you can go back and revisit them and watch them on demand! Classes are being held 3 times a week, Tuesdays at 7 pm, Wednesdays at 9 pm, and Saturdays at 4 pm. All times eastern.

My kids love the Costco meatballs with Classico spaghetti sauce and canned mushrooms added. Top it off with some parmesan cheese and garlic bread and they eat it like there's no tomorrow.

Our favorite recipe is something I made up. We call it 'That Mexican Stuff' LOL I take store bought toquetos thawed and cut into peices. I layer them with refried beans, salsa, sour cream and cheese in a baking dish. Back @350 for 45 minutes and serve with chips. It's Yum!

No matter how ambitious and adventurous I am with our meal plans it is good old comfort food that always wins at our house. Our kids love meatballs and mashed potatoes. Our jumbo meatballs are equal parts pork sausage and beef with parsley, bread crumbs, eggs, olive oil, italian seasoning and parmesaan.

We love the following:
Mama G's Mexican Cornbread

3 C. self-rising corn meal
1 1/2 C. shredded cheddar cheese
3/4 C. oil
1 can cream style corn
3 Tbsp. sugar
1 large onion, chopped
3 eggs
3 jalepeno peppers, chopped

Mix all well in a large bowl. Pour into two small square pans. Bake 40 minutes at 400.

Tatertot casserole is a favorite here.

1 bag of tatertots
1 bag of shredded cheese 2 cups
1pd. of ground turkey or hamburger
1 can of celery soup

Ground up your hamburger/turkey burger and add a pk. of onion soup mix. Cook till done. Mix your can of soup, with one can of milk.

Spray pan for quick clean up, then put a small layer of soup. Then arrange tatertots, hamburger and cheese and pour remaining soup over it. Cook at 400 for 20-25 mins. according to tatertot package.

We have a lot of family favorites from grilled chicken wraps to chicken enchiladas (we eat a lot of chicken dishes) but I think I will share TTC with you.

TTC is Tator Tot Cassarole, so yummy!

1 1/2lbs ground beef
1 medium onion chopped
1 stalk of celery chopped
Seasonings (salt, pepper, season all)
1 family size Campbells Cream of Mushroom Soup (I have tried the cheaper brands, yuck)
1 bag of tator tots

Brown hamburger, add seasoning, celery, onion (a tad bit of water if you need it) and put a lid on and let it steam till tender.

Put all the mixture into a casserole dish and top with the bag of tator tots, put in the oven and cook till tator tots are done. We like to turn on the broiler in the last few minutes so the tator tots are extra crispy.

Super easy to make. Enjoy!
