Menu Plan Monday

What a week... what a life... what a year so far...
Can you believe that MVP health insurance DENIED my husband inpatient rehab coverage?!?!?! Its sick and sad and things are chaotic around here again....

Saturday: Breakfast for dinner

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!! Check out more Menu Plan Monday entries at orgjunkie!!

Recipes::

Crockpot Chicken Broccoli Divan from Eat At Home

Crockpot Swiss Steak (from Finding Joy in my Kitchen)
1 1/2 lbs. boneless beef steak of your choosing
3 T flour
1 tsp. ground mustard
1/2 tsp. salt
2 T olive oil
1 can stewed tomatoes
2 garlic cloves, minced
1 large onion, sliced
1 large green bell pepper, sliced


Cut beef into 6 serving pieces. In a small bowl, combine flour, mustard and salt. Coat the beef in the flour mix. In a 10-inch skillet, heat oil over medium heat. Cook beef in oil for about 15 minutes, turning once, until brown. Place beef in a 3.5-6 quart slow cooker. Top with onion and bell pepper. Mix tomatoes with garlic and pour over the beef and veggies (alternatively, you can used a can of diced tomatoes with onion and garlic). Cover and cook on low for 7-9 hours.


Spaghetti Frittata:
2 c. cooked spaghetti
1 c. frozen peas
1/4 c. italian dressing
6 eggs
1/4 c. milk
1/2 c. chopped green onions
4 slices, cooked, drained, chopped bacon
1 c. shredded mozzarella cheese
1 tomato cut into slices

Toss spaghetti, dressing and peas and put into a 9" pie plate. Beat eggs and milk and pour over top of the spaghetti mixture. Sprinkle with onion, bacon and cheese, top with tomatoes. Bake 40-45 minutes or until center is set. Wait 10 minutes before cutting into wedges and serving.

Chicken Carbonara
1/2 lb. spaghetti
8 slices, chopped bacon
1 onion, finely chopped
1 garlic clove, finely chopped
2 cups chicken, already cooked and cut up
1/2 c. grated parm cheese
1/2 c. heavy whipping cream

Cook and drain spaghetti, cook bacon and then drain, save 1 tb. bacon grease. Cook onion and garlic in the reserved grease. Stir in spaghetti, chicken, cheese and cream, stirring well, and occasionally until heated through.

Ham & Cheddar Mac
1- 7 oz. pk. mac & cheese dinner
1- 10 oz. pk frozen peas
About 10 slices of deli honey ham
1/2 c. shredded cheddar cheese

Prepare mac & cheese as directed, add the peas to the boiling water for the last 2 minutes. Drain, stir in ham and 1/4 c. of cheddar cheese. Top with the remaining 1/4 c. of cheese and enjoy!!

Crock Pot Mac & Cheese
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
2 tbsp. minced onion
1/2 tsp. paprika
3 c. milk
1 c. shredded cheddar cheese
2 c. uncooked elbow mac

Spray crock pot with non-stick spray. Combine flour, salt, pepper, onion, paprika and milk in a saucepan. Whisk until there are no lumps, keep heating until starts to thicken and boil. Add cheese and mac. Stir til well mixed and pour into the crock pot. Cook on low 2-3 hours.
