Menu Plan Monday... errr... Tuesday

Yes, I'm behind. I'm aware of it. I'm doing my best to catch up. I have a few really great things coming up, if only I could just catch up on everything. Keep posted cause a couple awesome giveaways are coming soon!!

Monday: Chicken Casserole (from freezer)

Saturday: Leftover Night

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!! Check out more Menu Plan Monday entries at orgjunkie!!

Recipes::

Short Ribs
2/3 cup all-purpose flour
2 teaspoons salt
1/2 teaspoon pepper
4 to 4-1/2 pounds boneless beef short ribs
1/4 to 1/3 cup butter
1 large onion, chopped
1-1/2 cups beef broth
3/4 cup red wine vinegar
3/4 cup packed brown sugar
1/2 cup chili sauce
1/3 cup ketchup
1/3 cup Worcestershire sauce
5 garlic cloves, minced

Combine flour, salt and pepper, toss ribs in the mixture to coat. Melt butter in a skillet and brown ribs in the butter. Remove ribs and place into crock pot. Combine all other ingredients and add to skillet. Bring to a boil and then pour over ribs in crock pot. Cook on low 9-10 hours.

Company Chicken Casserole from Hillbilly Housewife

Crockpot Tortellini
1 jar marinara sauce
1 c. sliced mushrooms
1 can italian style diced tomatoes
1 package cheese tortellini (9 oz or so)
1 c. shredded mozzarella cheese

You can add beef or sausage to this as well, just brown first. I do this like the crockpot ravioli recipe (see here).

Tuna Noodle Casserole
1 can cream of mushroom soup
1/2 c. milk
1 c. cooked peas
2 cans of drained and flaked tuna fish
2 c. hot, cooked egg noodles
2 tbsp. bread crumbs
1 tbsp. melted butter or margerine

Mix soup, milk, peas, tuna and noodles in a casserole dish. Bake at 400 degrees for 20 minutes. Stir. Mix bread crumbs and butter and place on top. Bake for an additional 5 minutes.
