Menu Plan Monday

Once again, a few things got bumped around on this weeks menu plan... I forgot to pick up ketchup (I definitely thought we had more on hand), and I moved the Cheeseburger Joes to tomorrow night!!
Monday: Cheeseburger Joes

Tuesday: Cantonese Pork

Wednesday: Sun Dried Tomato, Onion & Balsamic Chicken

Thursday: Crockpot Pizza

Friday: Turkey Burgers

Saturday: BBQ at a family friends house!! (night off for me!)

Sunday: Chicken Caesar Salads

Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!!

Recipes:
Cheeseburger Joes (from Kraft)

1 lb. lean ground beef
1/2 cup Barbecue Sauce
1/4 cup ketchup
hamburger buns
4 KRAFT Singles (although I use sliced cheddar)

Brown meat in a skillet and drain, mix in BBQ sauce and ketchup, cook for 5 minutes stirring occasionally, spoon onto burger buns and top with cheese.

Cantonese Pork (crock pot)
2 lbs pork tenderloin
1 tbsp veg. oil
8 oz can pineapple chunks in juice (dont drain!)
8 oz can tomato sauce
2- 4 oz cans sliced mushrooms
1 thin sliced onion
3 tbsp brown sugar
2 tbsp worsterschire sauce
1.5 tsp salt
1.5 tsp white vinegar

Cut pork into 1-1.5" thick slices and brown pork on all sides and drain off fat.
Put pork, pineapple, tomato sauce, mushrooms, onion, brown sugar, worcestershire and vinegar in crock pot and cook on low for 6-8 hours. Serve over rice!

Sun-Dried tomato, onion and balsamic chicken (crock pot)
1 onion, coarse chopped
1 c. dried tomatoes
1/3 c. balsamic vinegar
1 lb. chicken breast
1/3 c. melted butter
1 tbsp italian seasoning
another 1/3 c. balsamic vinegar

Put the chopped onion on the bottom of the crock pot, top with sun dried tomatoes, pour 1 of the 1/3 c. balsamic on top. Combine melted butter with italian seasoning, coat chicken with that mixture and put on top of the onion/tomato/balsamic in the crock pot. Pour remaining 1/3 c. balsamic on top and cook on low 6-8 hours or high for 3 hours.

Crockpot Pizza
(crock pot!)
crust:
1.5 c. biscuit mix (like bisquick)
1.5 c. water

16 oz. jar pizza sauce
1.5 c. mozzarella cheese
pizza toppings of your choice

Spray the inside of the crock pot with non-stick spray. Put about 1/4 of the sauce on the bottom of the crock pot. Mix the crust together and spread it out over the sauce, almost touching the sides. Top with the rest of the sauce, cheese and whichever toppings you choose. Cook on high for about 2 hours.

I've been toying with this one....

On the 25th, and since then, I've been sitting here and toying with the idea of this post. I like to brush things off and not let things bother me, I like to let go of negativity and I'd normally rather not dwell on it, but I have to say something.

The night of the 25th, I got a comment on a fabulous giveaway that I was hosting... It wasn't something little, it wasn't something major, but it was a really nice giveaway and it definitely burned me that the very first comment made on it was:

"What a bogus way to get people to visit such a lamo blog site! Give us all a break! Geesh."

Now, with that being said, most people use an alias or just a first name in their blogger profile... Nope, not this winner- he uses his FULL email address, if you would like to know who it is, look for the very first deleted comment in one of my Snazzy Summer giveaways, since when you delete a comment, it doesn't delete the user name or time that it was posted. So... what do I do? I email this guy and ask "Are you serious? Must you be so rude? Are you that miserable?
If you have a problem with my site, the answer is quite simple, don't visit."

Do you think that I got a response? Oh and I did google the email address because is this something that one wants associated with a BUSINESS, since they left a BUSINESS email address? I was curious what the business was etc... and found out that I'm not the first blog that this jackass left these types of comments on.

Lets be Frank, it takes a whole lot more time and effort to type up a comment versus just clicking the X and closing out the page. So close my page- I dont care! I love the readers who love me, I love the friends that I've made and I love the friends that I will continue to make.

I know the commenter originated from a sweepstakes site, which I'm so totally cool with, but honestly, if you don't like the blog giveaways, just click the X. Just leave. Why waste your time on ME? I mean, I totally know that I'm cool and yeah, I rock... but if you're gonna leave nasty comments, dont think that its gonna bring me down, cause it wont, I'll still be cool and I'll still be rockin' out from the couch...

Six Degrees of Cool Hydration

MetroMint is going to definitely be my new favorite way to refresh myself on the hot summer days coming up!! MetroMint is a minty, chill infused water along with flavors. I honestly don't drink nearly enough water, not because I don't like it, I just end up getting bored with it. MetroMint is a surefire way to beat my boredom with water. We tried out each of their flavors, spearmint, peppermint, chocolate mint, orangemint, lemonmint and cherrymint, and the hub and I both agreed quickly that the lemonmint was definitely our favorite!! (This coming from 2 people who adore mint iced tea, but can't ever find a good one anymore!) My mom stopped by while we were trying out the MetroMint water and she snagged up the spearmint on me, and even miss picky herself liked it!!The chocolatemint, on the other hand, kind of meant something different for me. It reminded me a lot of mint chocolate chip ice cream, which I love, and I'm thinking that an ice cold MetroMint Chocolate Mint water might be a great deterrant from ice cream while dieting!!

Zero calories and zero sweeteners... HUGE PERK! Because I try my best not to give Boug anything with added sugar or crap in it and I was able to share my MetroMint water with her, though her favorite was the CherryMint variety!

Summertime Memories!


Its stories like this that make me feel old as heck. I was 5, so that makes that almost 22 years ago...

When I was a kid, there was a family up the street that used to babysit me. They are some of the most wonderful people ever and they always treated me like one of their own kids, even though there was quite a few years in age difference between us. They watched me while my mom worked for about 4 years. First the older sister watched me, then when she outgrew babysitting, the younger sister watched me. One summer, their Mom said that they were taking a vacation, and as to not leave my own Mother stranded without a sitter for a week and a half, they offered to take me with them. How could my Mom say no when she told her that they were going to Orlando, FL to Disney World?? I had never been to Disney World and this was going to be an affordable way to allow me to go as a kid. (I feel EVERY kid should go to Disney at least once DURING their childhood!)

With so much anticipation, the day finally came when we were going to leave for Disney World. It was four of us, driving from New York to Florida, making only a few stops along the way (of course, South of the Border!). When we got there, there was so much to do, so much excitement and I was completely overwhelmed at only 5 years old. I had hurt my ankle shortly before leaving, so spending some of the trip on crutches wasn't completely fun, but it was still something that will stay with me forever.

Standing in front of Epcot Center with the girls that I looked up to so much. Going to Michael Jackson's 3D show and seeing the light parades, not to forget the rides that I'll never forget. I have to say the "Its A Small World" ride was my absolute favorite. I absolutely loved all the puppets from the different countries singing the "Its A Small World" song. I remember dancing through the street towards the end of our trip, giving up my crutches so that I could twirl around in my orange dress and my white Keds.

I'm hoping that in the summer of 2011, when Boug is 7 and Lil' Buddy is 3, that we'll be able to afford to take them down to Disney World. When we go, I'm going to be checking out OrlandoFunTickets.com, since they have all the discount Disney tickets that you could need for our trip! I love finding ways to save money and OrlandoFunTickets.com is a great way to save money on a Disney World trip!

What did we do???


About 12 or so years ago, before the internet was so wide spread and easily accessible, what did Mom's do??

That's what I read on another board and I was simply SHOCKED at the fact that this person went on to basically flame Moms who blog. That, with their complete sarcasm, Moms must have been stupid without the internet and Mommy blogs. That other family members are completely shit outta luck, like fathers, grandparents etc... And that no one is watching our kids while we blog.

This is just something that I can't not respond to! I try not to get too controversial, I try not to be such a bitch, I honestly try. But sometimes it goes by the wayside and I end up being rotten, and thats okay with me every now and again...

I'm sorry, but when someone talks like this they sound like a very JEALOUS person, feeling like the kid last picked in the baseball game. Are you hurt that you don't have a network? Are you sad at the fact your peers haven't accepted you? What is it? Because there's a huge world out there of blogs, and not all are "mommy" blogs. With that being said, its not about "what did Moms do before blogs?" Its about the community, its about the networking, its about the friendship, its about the knowledge. If I can help someone with one little bit of advice, that feels good. If someone can tell me something that will make cleaning my house easier, I want that information. If I'm having a horrible day, I have friends here who will "listen" to be whine and cry because they know what it is to feel like that too at times. Isn't it nice to know that you're not the only Mom out there that feels a certain way, that you're not the only one needing a few minutes to chat on blogs to give yourself a break? Isn't it nice to know that you can come online and get bounds of information about anything, directly from people just like you and you can take that information for what its worth??

Its not a matter of "What did Moms do before the internet?" its a matter of "Thank God for all that is more readily available to Moms thanks to the internet!"

Does it make me a bad mom because I turn to the internet for information? Does it make me a bad mom that I use my blog to mark some occasions in my childrens life? Does it make me a bad mom if I turn to my blog friends to take some time for myself and unwind a bit? In my eyes, that doesn't make me a bad mom, it makes me a BAD ASS MOM because I have just THAT MUCH MORE information, THAT MUCH MORE support, THAT MUCH MORE sanity!! Being a bad mom would be putting a dog shock collar on my kids so that they could go out to play while I sit inside on the computer... but we know that would never happen in the age of super cool laptops.

And by the way, as I write this I'm NOT neglecting my children... Boug is coloring nicely and Lil' Buddy is chasing and rolling a ball around the living room.

Snazzy Summer features... Toddler Virtue Tees!!


I love clothes for my kids with a meaning, whether it be heartwarming, witty, adorable or anything else, I just love them. Toddler Virtue Tees are in a category all of their own. Snazzy Summer features... Pediped!!



The shoes out there are always so cute for little girls, but what about the little men? I've only found a handful of great shoe brands that have cute shoes for little boys. Pediped is definitely one of those brands!!

Pediped, as they say, are the next best thing to bare feet! And with Lil' Buddy beginning to walk, any shoes that don't stand in the way of his balance are wonderful in my eyes. Pediped shoes are supportive, but not restricting, and haven't gotten in the way of Lil' Buddy being able to figure out his balance... its a work in progress and I wouldn't want to hinder that! We received the light brown Harvey sandals for the man and they're so soft and so cute on his chubby little feet!!

There have been few shoes that measure up to my high standards for my kids and Pediped shoes are one of those that do. They're soft, made well, and they actually stay on Lil' Buddy's feet!!

Snazzy Summer features... Hip-T!!


Its summa-time! (almost).... Time for tank tops and bathing suits, shorts and flip flops!! There's really nothing more that I have then an awesome shirt that just isn't long enough for me, or jeans that are just a little bit TOO low rise. I like to cover up my assests (hahaha!!) with the Hip-T that I received not too long ago!!

The Hip-T was made to lengthen your shirts, hide your bum, camoflauge that muffin top and layer without getting all bulky!! We pick on Boug because she's always, as we call it- "hangin' crack" with the fact that she's got hardly any hips to keep her pants up, and now with my post 2nd baby body, none of my clothing is fitting right so she's turned the tables on me and now tells me- "Maaaa.... You're hangin'!!!" She thinks its hilarious, where as, I, definitely do not.

Boug hasn't been able to tell me in about 2 weeks that I'm "hangin'" which I love because I've been wearing my Hip-T with every shirt that's just a tad too short and every pair of jeans that just sinks too low. Even my mom complimented me on it since it helps to hide the muffin top and she's always giving me hell about losing weight! The Hip-T comes in so many great solids, lace trimmed and cool prints that there's definitely one for every outfit and every personality!

Snazzy Summer features... Summer Fun!!

With the economy the way that it is these days, I know that we can't all rush off to Disney or Sea World or anything, so I've been trying to find fun things to do around the house that we don't normally do. The only thing that we have planned for this summer as a major outing is driving down to the city next week to head over to the Bronx Zoo! Its going to be Boug and Buddy's first time and I can't wait to see what they think!!

As for things that I'm looking forward to doing around here, maybe you'll look forward to them too!!

I'm super excited about making ice cream this summer with the kiddos, whether or not I purchase the electric ice cream maker or the rolly ball type ice cream maker is the next decision!!

Snazzy Summer features... Save the Chairs!!


With the messes that summertime brings, how do you cut corners with clean ups? How do you keep yourself from having to clean clean clean and miss out on actually enjoying yourself sometimes?

When I discovered Save The Chairs, I really just had to have them!! Lil' Bud is at that stage where the booster seat is great and he loves it, BUT... his lovely pureed carrots end up splattered on my chairs and table and even me. But thankfully, Save the Chairs arrived and I've been able to cut a few minutes out of my cleanup routine with their awesome chair covers. And they totally make sense- You use slipcovers and upholstery to rejuvenate your furniture, make things look fresh and new around your house, so why neglect making your chairs look great as well?

Hello... how much do I love that Save the Chairs machine washable? They adjust to fit practically every chair too, so of course, I had to bring one of mine over to my moms when we were over for dinner one night. Their dining room set is still fairly new and putting Bud and his booster on a chair without the fear of smooshy bananas getting on it is a wonderful thing. Though their chairs are tall and narrow and ours are more regular, shorter dining room chairs, Save the Chairs fit on both sizes with no problems!

Snazzy Summer features... Kiki's Fashions!!

Menu Plan Monday

With a busy week of the Snazzy Summer event, family get togethers, long weekends and general stress, I finally sat down to figure out what next weeks meals would be... This was one of those weeks where I just didn't feel like doing it, but I know I'd be broke by Wednesday if I didn't!!

Monday: Ham and Cheddar Mac

Tuesday: Chicken Quesadillas

Wednesday: Cheeseburger Joes

Thursday: Reuben Sandwiches

Friday: Maple BBQ Chicken

Saturday: Beef tips over Noodles

Sunday: Oriental Chicken Salads


Once again, breakfasts are usually cold cereal, oatmeal and sometimes Boug just wants toast and a banana! Lunches usually are leftovers or sandwiches paired with yogurt or fruit generally. My meals are usually a bit heavier in meats and chickens as hub is a butcher and brings so much home for free or next to nothing!!

Recipes:

Ham & Cheddar Mac:

Chicken Quesadillas:
Totally to your own taste!!
I like mine with grilled chicken, onion, tomatoes and some guacamole on the side!

Cheeseburger Joes:
Once again, from kraftfoods.com

Reuben Sandwiches:
Make in crockpot!!
Saurkraut on bottom,
place corned beef brisket on top and sprinkle spice packet on top of the brisket.
Cook on low for 8-10 hours.
Assemble sandwiches with corned beef and saurkraut, swiss, 1000 Island dressing on toasted marbled rye.

Maple BBQ Chicken:
taken from RazzleDazzleRecipes.com
1 cup ketchup
1/2 cup maple flavored syrup
2 tablespoons prepared mustard
2 tablespoons Worcestershire sauce
2 teaspoons lemon juice
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
4 boneless, skinned chicken breasts

Place all ingredients in crockpot and cook on low for about 7 to 8 hours or until chicken is done. Remove meat, shred and return to sauce. Place on buns for sandwiches or serve over hot rice.

Beef over Noodles:
This recipe is supposed to be made with sirloin tips, but to save I pretty much will use whichever cut of beef is thawed out.
1 lb. beef, cut into chunks
1 can cream of mushroom soup
1 small can of sliced mushrooms

Place all into the crockpot and cook on low for 6-8 hours, serve over egg noodles, I sometimes top with a dollop of sour cream if I have it in the fridge!!

Oriental Chicken Salads:
I miss working at Applebee's and getting them whenever I want, so I attempt to come as close as I can at home!!

1 romaine heart, cut up
1/2 red cabbage, shredded
1/2 green cabbage, shredded
1/2 cup rice noodles
3 tbsp. slivered almonds
1/2 lb. chicken, cut into strips and cooked- either grilled or breaded and fried
1/2 cup shredded carrots

Dressing:
1 cup mayo
1 cup sugar
2 tbsp red wine vinegar
Mix together and drizzle over salad mixture
